2 slices white bread, torn into pieces

2 cups cold water

4 garlic cloves, cut in pieces

1 cup pitted green olives

2 anchovy fillets, cut in pieces

1 cup thinly sliced almonds

1/4 cup capers, drained and rinsed

1/2 cup olive oil

Juice of 1 lemon

Freshly ground black pepper

Whole-wheat flour raised with yeast lends a depth of flavor that is well worth the wait for the batter to rise. Blini can be made ahead and warmed in the oven just before serving.

1 3/4 cups milk, divided

1 tablespoon dry active yeast

1/4 cup warm water

1/2 cup all-purpose flour

1 cup whole-wheat flour, preferably stone ground


1 red bell pepper

3 eggs, separated

3-4 tablespoons melted butter, for frying
