2 tsp ginger garlic paste

2 tsp turmeric powder

3 tbsp ghee, or unsalted butter

1/2 cup water

1/2 tsp cumin seeds

1/2 tsp whole black peppercorns

4 x green cardamom pods

1 x black cardamom pod

1 x small stick cinnamon, about 2 inches long

1 x whole red dried chili, stemmed

1 x whole fresh serrano green chili, stemmed

2 tbsp plain yogurt

1/2 tsp fleur de sel

1/4 tsp cayenne powder

1/2 tsp smoked paprika powder

1/4 tsp nutmeg, freshly ground

1/2 tsp mustard seeds

1 tsp curry powder

1 x small chunk unsalted butter, for coating pie shells

6 x squares puff pastry dough, store-bought, thawed
