3 × 400g artichoke (1 per person)

100 g lemon (about ½ a lemon)

90 g shallot (3) or onion (1)

3 cloves of garlic

1 small bunch of thyme

1 bay leaf

500 ml chicken or vegetable stock

500 ml water (enough to come halfway up the side of the artichoke)

100 ml olive oil
