2 cups farro

4 cups vegetable stock

1 cup dried porcini mushrooms – rinsed to remove and grittiness and drained

½ cup Colombo Sweet Marsala

½ cup Colombo Dry Marsala

½ cup shallots, finely diced

¼ cup garlic, finely diced

1 tablespoon cold butter

3 cups cleaned and dried baby spinach leaves

¼ cup red pepper, small diced

¼ cup grated Parmigiano-Reggiano (optional)
