3 tablespoons extra-virgin olive oil

1 small onion, finely chopped

Freshly squeezed juice of 1/2 lemon

1 tablespoon tomato paste

1/2 teaspoon ground caraway seeds

4 cups water

1 teaspoon ground coriander
