6 slices crisp bacon , crumbled

1 1/2 teaspoons minced garlic

1 tablespoon chopped fresh oregano

1/3 cup chopped cilantro

1 tablespoon minced garlic

2 1/2 lbs sweet potatoes , peeled and cut in 3/4-inch pieces

1 tablespoon freshly grated lemon peel

2 cups frozen green peas , thawed

2 tablespoons lemon juice

1 1/2 cups corn

1 cup thinly sliced radish

1/2 cup light mayonnaise

2 1/2 lbs small red potatoes , scrubbed and cut in 3/4-inch pieces

1/4 cup cider vinegar

Tex Mex Sweet Potato Salad

1/2 cup reduced-fat sour cream

1 cup chopped celery

Greek Potato Salad

2 cups diced zucchini

1/2 cup plain yogurt

1 pint halved grape tomatoes or cherry tomatoes

1 cup chopped onion
