Ingredients for 6 servings

1 box (14 oz.) bucatini rigati, cooked and drained

1 jar (12 oz.) roasted red peppers, drained and chopped

2 zucchini, sliced

2 yellow squash, sliced

1 or 2 green peppers, chopped

1 can artichoke hearts in water, drained and chopped

1 jar black olives, whole or sliced, drained

1 jar peppercini peppers, drained and stems removed

1 small bag fresh spinach leaves, torn

1 can whole button mushrooms, drained

1 stick pepperoni, sliced thick

1/4 lb. salami, sliced thick and cut into strips

1/4 lb. Prosciutto, cut into strips

1/2 cup mozzarella cheese cubes

1/2 cup cheddar cheese cubes

1/2 cup pepper jack cheese cubes

1 bottle (16 oz.) Zesty Italian salad dressing

3 Tbsp. basil pesto

Salt and pepper to taste
