3/4 cup canola oil

1 cup all-purpose flour

1 1/2 cups diced onions

3/4 cup diced celery

1 1/2 cups diced green bell peppers

1 cup diced red bell pepper

Crab tomalley, reserved from stock

1 tablespoon minced garlic

1 tablespoon kosher salt + more to taste

3/4 teaspoons sweet paprika

1/2 teaspoon chili powder

1/4 teaspoon cayenne

1/4 teaspoon dried oregano

1/8 teaspoon dried thyme

1/8 teaspoon chile flakes

1 pint shucked oysters, liquor strained and reserved

1 cup cut-up ( 1/2-inch) fresh or frozen okra

1 1/2 quarts Seafood Stock (see Note and recipe in article link)

1 pound medium-sized shrimp (about 18-20) reserved from the stock, peeled and deveined

Dungeness crab reserved from the stock

Steamed rice, for serving
