Pineapple Teriyaki Chicken Skewers

6 tablespoons pineapple juice

1/2 teaspoon Amontillado sherry

1 large garlic clove, peeled and smashed

2 coins fresh ginger, about the size of a quarter and 1/4-inch thick, smashed

1 tablespoon sugar

2 teaspoons Asian fish sauce (optional)

1 1/2 pounds boneless, skinless chicken breast and/or thighs

-- Canola oil or olive oil as needed 3 to 4 spears fresh pineapple, cut about 1/2-inch wide (about 2 cups) or, use pre-cut fresh pineapple chunks

-- Kosher salt, if desired
