Next time I will allot more time to make this. It takes about an hour or so therefor if your looking for a quick dinner, and usually frittata's are quick, this isn't one to make. However it is good.

Ingredients for 6 servings

5 tablespoons Olive Oil

1 teaspoon Kosher salt

2 Large Onions finely chopped

3 Large Russet Baking Potatoes (about 1 ½ pounds)

½ teaspoon Dried Rosemary

¼ cup Chicken Broth

6 Large Eggs

½ cup Thinly Sliced Scallions (about 5), plus more for garnish

Freshly Ground Pepper

2 tablespoons Chopped Italian Flat-Leaf Parsley, for garnish
