1/2 teaspoon cumin

10 soft taco-size flour tortillas

1/4 teaspoon coriander

1 red onion , chopped

1 teaspoon ground cumin

2 poblano peppers, roasted and chopped

3 garlic cloves , minced

1/2 teaspoon garlic powder

1/4 cup green onion , finely sliced

1-2 serrano pepper (optional) or jalapeno pepper, minced (optional)

For the Enchiladas

1/4 teaspoon white pepper

2 tablespoons flour

2 tablespoons butter

1 large shallot , finely minced
