1 x scallion, finely chopped

1 tbsp hazelnut oil

4 tbsp fresh soft goat cheese (Chavroux)

Sea salt and pepper

Freshly shaved Parmesan cheese

1 tbsp chopped mint

4 slices brioche, toasted

2 cup watercress, washed

6 x pink radish, finely sliced

Lemon juice and hazelnut oil, to taste, for the watercress salad dressing
