2 1/2 cups low sodium chicken broth (20 fl oz)

1/2 teaspoon anise seed

3 lbs boneless pork shoulder , cut into 1 1/2-inch cubes

1/4 teaspoon salt

1/2 cup medium-dry sherry

1 cinnamon stick

3/4 teaspoon black pepper

1 tablespoon sugar

3 fennel bulbs , stalks cut off and discarded, then bulbs sliced lengthwise 1/4 inch thick

4 slices peeled fresh ginger (1/2-inch-thick)

1/2 cup coarsely chopped fresh cilantro

1/2 cup soy sauce

2 slices fresh orange zest

4 garlic cloves , smashed

1 large onion , chopped

2 tablespoons vegetable oil
