1/4 cup pears

1/4 cup pear cider

2 tbsp soy sauce , preferably low sodium

2 cloves garlic , minced

1 tsp minced gingerroot

4 sablefish fillets , with skin (about 6 oz/175 g) each

2 tbsp vegetable oil

8 cups baby greens , about 10 oz (300 g)

3 tbsp walnut oil

4 tsp pear cider

4 tsp champagne vinegar

2 tsp minced shallots

2 tsp chopped fresh lemon thyme

2 tsp maple syrup

1 pinch salt
