1 bottle of red wine, good quality, low on tanins such as Merlot or Pinot Noir

1 bunch of thyme

bay leaf

2 garlic cloves

1/2 an onion, chopped coarsely

2 shallots, chopped coarsely

1 stick of butter, room temperature, cut into 1 inch thick slices.
