I'd count on 2x the time scaling these up. The recipe from Pinch My Salt calls for 8 eggs and 20-25 minutes here: www.foodily.com/s/egg-breakfast-muffin

Ingredients for 48 servings

1/4 cup Cornstarch

1 1/4 cup Whole Milk

2 large Eggs

2 large Egg Yolks

1 cup Heavy Cream

3/4 teaspoon Kosher Salt

1/8 teaspoon Nutmeg

oil for the pan

1 T. olive oil

4 cloves garlic, minced

2 minced Shallots

2 grated Zucchini

1/4 cup gruyere or parmesan, grated

fresh basil, finely chopped
