2-4 lbs of mussels (1 lb per person)

6 cloves of garlic, minced

1 white onion, chopped

1 Tbsp olive oil

1 Tbsp butter

3-4 sprigs fresh thyme (or 1 Tbsp dried)

1 pinch saffron threads (optional, would still be great without)

1 cup white wine

4 cups chicken broth

1 Tbsp tomato paste

2 pinches of red pepper flakes

1 pkg . pasta (I used fusilli, but any will work, linguine is a great option)

6-10 pieces toasted french bread
