Ingredients for 10 servings

2 tablespoons neutral oil (peanut, grapeseed or canola)

2 medium yellow onions, peeled and diced

2 cans masaman curry paste

6 cups coconut milk (unsweetened canned)

2 cups chicken stock

2 ½ pounds boneless, skinless chicken thighs or breasts, or a combination

1 pound potatoes (I like yukon gold), peeled and cut into bite-sized cubes

2 tablespoons fish sauce

2 tablespoons brown sugar

2 wild lime leaves, optional (also known as kaffir lime)
