olive oil

bunch of fresh sage leaves picked and roughly chopped

200 g chicken livers cleaned and roughly chopped

3 kg boned shoulder of pork butterflied and skin on

bunch of fresh flat leaf parsley leaves picked and roughly chopped

Ingredients

2 onions peeled and finely diced

sea salt freshly ground black pepper

100 g raisins

8 carrots

75 g pine nuts

200 g pork mince

1 wineglass red wine or mulled wine plus a bit extra for the stuffing
