1 bunch radishes, ends trimmed and finely diced

10-12 (or more) grape tomatoes, quartered

2-3 ramps, finely chopped

2 tablespoons fresh lime or lemon juice

1 small clove garlic, crushed

1/4 teaspoon red pepper flakes (or to taste)

1 tablespoon extra-virgin olive oil

salt and pepper to taste

4 lb piece of pork shoulder (bones intact if any)

2 tablespoons chili powder

1 tablespoon cayenne pepper

1-2 teaspoons cumin

1-2 teaspoon oregano

1/2 head of garlic, chopped

salt and pepper, plenty

2 tablespoons vegetable oil

1 bunch asparagus, ends trimmed and chopped to 1/2-inch pieces

rest of the bunch of ramps, both white and green parts finely chopped

8-12 oz. smoked cheddar, shredded

16 oz. (or more) tortilla chips
