Ingredients for 6 servings

16 oz red beans, soaked

1 tbsp bacon grease (can substitute canola or olive oil if you prefer)

1 x bell pepper, chopped

1 medium yellow onion, chopped

2 x celery ribs, diced

6 x cloves of garlic, minced

1/4 lb andouille sausage, cubed

1/2 cup parsley, minced

2 x bay Leaves

1 tsp dried thyme or 1 sprig fresh

1 tsp dried leaf oregano

1 tsp Sweet paprika

1 tbsp worcestershire

Cayenne, salt and black pepper to taste

2 x smoked ham hocks

8 cup chicken broth or water

4 x green onions, green part chopped (save the white for another use)

6 cup Cooked rice
