4 ounces chopped raw chicken

3 hard-boiled eggs

3 slices bacon , rind removed and chopped

1 medium onion , finely chopped

3 garlic cloves , finely chopped

2 tablespoons tomato sauce

steamed dumpling dough (Bergy Dim Sum #5, Bergy Dim Sum #5, Steamed Shrimp Dumplings , you may have to increase this recipe slightly)

2 tablespoons gherkins, chopped

1 teaspoon lard or oil

salt & pepper
