1 cup finely chopped fresh parsley

1/4 cup chopped fresh cilantro

3 bunches chives or 12 scallions, finely chopped (2 cups)

1 cup fish stock or bottled clam juice

1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme leaves

3 large ripe tomatoes, peeled, seeded and diced (about 2 1/4 pounds)

1 bay leaf

1-2 Scotch bonnet chiles (or other very hot fresh chiles), seeded and finely chopped

1 onion, finely chopped

2 teaspoons finely chopped fresh ginger

1 1/2 teaspoons curry powder, preferably Madras

2 tablespoons tomato paste

6 cloves garlic, finely chopped (2 tablespoons)

4 shallots, finely chopped

2 tablespoons lime juice, plus more to taste

18 jumbo or 24 large shrimp (about 1 1/2 pounds), peeled and deveined

1 1/2 tablespoons extra-virgin olive oil

1/4 teaspoon salt

1/3 cup dark rum

1/4 teaspoon freshly ground pepper
