2 tablespoons neutral oil

1 tablespoon olive oil

1 small onion, diced

1 celery stalk, diced

1 large garlic clove, minced

1 teaspoon dried thyme

½ cup rich red wine (I used one from Bordeaux)

2 cups water

½ square bouillon (optional)
