136 gm For Sponge,Flour

86 gm water

30 gm mature 100%-hydration sourdough starter

For Final Dough,all of the sponge

3 gm salt

8.5 tbsp whole anise seeds, toasted

120 gm olive oil

1/2 tbsp lemon zest

25 gm shelled roasted pistachios (about 50 nuts), very finely chopped (grind in a minichopper if you have one)

65 tbsp flour

70 x white whole wheat flour

For Topping,20 g shelled roasted pistachios (about 40 nuts), coarsely chopped

granulated sugar
