8-10 large carrots, washed, trimmed and halved lengthwise

1/2 of a large onion, thinly sliced

1/2 cup olive oil, divided

1/4 teaspoon salt, plus more to taste

Freshly ground pepper

1 16-ounce box orzo

1/2 cup chicken or vegetable broth

1/2 cup plain greek-style yogurt

Zest of 1/2 a lemon

Juice of 1 lemon

1/4 cup chopped fresh dill

1/4 cup grated parmesan, plus more to top

1 tablespoon butter, cut into pieces, plus more for greasing baking dish
