3 large leeks

3 cups chicken stock, homemade if available

1 garlic clove, smashed and peeled

1 tablespoon lemon thyme (or regular thyme)

kosher salt and freshly ground black pepper

1/3 cup heavy cream

1 tablespoon lemon juice

leek trimmings, leftover from making the bisque

2-4 tablespoons all purpose flour

1/4 cup olive oil
