3 large ripe tomatoes, diced

1 tablespoon red-wine vinegar

3 medium zucchini, (about 1 3/4 pounds total), sliced on the bias about 1/4 inch thick

2/3 cup fresh basil leaves

Freshly ground pepper, to taste

1/4 teaspoon salt, divided

3 cloves garlic, crushed

1/2 cup finely chopped sweet onion, such as Vidalia

3/4 cup freshly grated Parmesan cheese

1 teaspoon fresh thyme leaves
