11 Ingredients

  • 1 ½ lbs of carrots, peeled if desired and grated
  • 1 ripe avocado, cubed
  • 1/3 cup parsley leaves, chopped
  • 3 Tbsps lemon juice
  • 1 tsp minced shallot
  • ½ tsp sea salt
  • A grind of black pepper
  • ½ tsp Dijon mustard
  • 1 tsp raw honey
  • ¼ cup cold-pressed, extra-virgin olive oil
  • ¼ cup raw sunflower seeds, toasted then drizzled with a drop of olive oil and a sprinkle of sea salt
