Ingredients for 8 servings

5 chicken breasts

4 to 6 cups chicken stock

3 large red potatoes, diced

3 large carrots, peeled and cut into slices

1/4 cup butter (1/2 stick)

1 large shallot, minced

1 small yellow onion, diced

2 tablespoons fresh thyme, leaves only

1 tablespoon fresh sage, minced

1/2 cup all purpose flour

1/2 cup dry white wine

1/2 cup whipping cream (or fat free milk, which I used)
