1 quart white vinegar , plus more if needed

12 scotch bonnet peppers or habanero peppers , 6 halved

1 tablespoon whole black peppercorn , coarsely crushed

6 large fresh thyme sprigs

2 inches ginger , peeled and sliced 1/4 inch thick
