1.5 cups hot water

1/2 teaspoon kosher salt

1/2 teaspoon baking powder (set aside for later)

1 tablespoon olive oil

1 pound lean ground chicken or turkey

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 large yellow onion, chopped

2 cloves garlic, chopped

1 tablespoon chili powder

1 teaspoon ancho chili powder

8 roma or plum tomatoes, chopped

3 ears corn on the cob, kernels removed

1 14.5-ounce can or 1.5 cups beans (garbanzo, white, kidney or pinto are all great)

1 4-ounce can diced mild green chiles

handful of fresh cilantro leaves for garnish
