olive oil

800 g 1 lb stewing steak or beef skirt cut into 5cm 2 inch pieces

a butternut squash halved deseeded and roughly diced

2 parsnips peeled and quartered

flour to dust

4 carrots peeled and halved

zest of 1 lemon finely grated

a handful of rosemary leaves picked

500 g 1lb 2oz small potatoes

sea salt and freshly ground black pepper

a bottle of red wine

1 clove of garlic peeled and finely chopped

285 ml pint beef or vegetable stock

1 onion peeled and chopped

a knob of butter

2 tablespoons tomato pur e

a handful of fresh sage leaves

optional a handful of Jerusalem artichokes peeled and halved
