Ingredients for 6 servings

4 yellow onions, minced

Freshly ground black pepper

4 large, ripe mangoes, peeled, pitted and cut into 1/2-inch dice (about 4 cups)

Pinch grey salt

2 vanilla beans, split in half

1 1/2 teaspoons extra-virgin olive oil
