Ingredients for 5 servings

1 tablespoons olive oil

1 small sweet onion, chopped

4 garlic cloves, chopped

1 tablespoon chili powder

1 tablespoon ground coriander

1 teaspoon cumin

1 14.5-ounce can fire-roasted tomatoes [with juice]

1/2 pound dried black beans, rinsed

5 cups water

1 teaspoon kosher salt

2-3 cups sweet potato, peeled, and cut into cubes

1/2 cup quinoa

Sour cream

Grated cheese

Fresh cilantro
