1 tablespoon olive oil

1 onion, sliced thinly

7 cups Katia's Meat Stock (see recipe)

3 carrots, sliced

3 potatoes, peeled and cubed

1 bunch fresh spinach, chopped, or 1 (12-ounce) package frozen chopped spinach, thawed

Cooked beef shank (from Katia's Meat Stock recipe), cut into pieces

1 tablespoon fresh lemon juice

2 teaspoons salt, or to taste

Freshly ground pepper to taste

Chopped fresh dill for garnish

Chopped hard-cooked egg for garnish

Sour cream for garnish
