For the vinaigrette:

6 plum tomatoes, chopped

1/4 cup red wine vinegar

2 teaspoons chipotle purée (page 12)

1 clove garlic, chopped

2 tablespoons chopped fresh basil leaves

1/2 cup mild vegetable oil, such as canola

Salt and freshly ground black pepper

For the artichokes:

4 large artichokes

1 lemon, halved

2 tablespoons olive oil, plus extra for brushing

2 tablespoons salt, plus extra to taste

Freshly ground black pepper
