1 cup heavy cream

1-1/2 cup flour (cake if you have it, otherwise all-purpose)

3/4 cup sugar

1/4 tsp salt

1 tsp baking powder

1/4 cup grape seed oil or vegetable oil

4 x egg yolks (approximately 3 oz)

1/4 cup water

1/3 cup pecan butter

7 x egg whites (approximately 7 oz)

1/4 tsp cream of tartar

1/4 cup sugar

1/2 tsp cardamom

1 tsp cinnamon

zest of one orange

9 oz white chocolate, melted, cooled to room temperature

12 oz cream cheese, softened

6 oz unsalted butter, softened

1 1/2 tsp fresh squeezed lemon juice, or to taste
