1.2l vegetable stock

3 tbsp olive oil , plus a little extra for brushing

200.0g full-fat soft cheese

1 egg , lightly beaten

3 onions , finely chopped

Ingredients FOR THE FILLING

100.0g mushrooms , sliced

FOR THE PASTRY

zest 1 lemon

3 garlic cloves , crushed

few bay leaves (optional)

85 g white vegetable shortening (we used Trex)

1 tbsp dark soy sauce

700.0g plain flour

250 g tub ricotta

85.0g whole cooked chestnuts , quartered

400.0g baby spinach

1 small butternut squash (about 1kg/2lb 4oz), peeled and cubed

140.0g butter

½ x 20g pack sage , leaves picked and chopped

100.0g pearl barley
