Ingredients for 8 servings

1 1/4 cup flour

1/2 tsp salt

1/2 tsp sugar

1 stick sweet butter (8 Tablespoons), sliced

1/4 cup ice water

1 lb fresh tomatoes, seeded and chopped

1 x red bell pepper

1 medium zucchini, diced

1 medium sweet onion, such as Vidalia, diced

2 x cloves garlic, minced

8 oz white mushrooms, chopped

4 tbsp olive oil

4 x eggs, lightly beaten

1 cup light cream

3 tbsp sherry

2 cup Jarlsberg cheese, grated

2 tbsp fresh basil, chopped (or 2 teaspoons dried)

1 tsp salt

black pepper to taste
