Ingredients for 4 servings

1.0 tbsp olive oil , plus extra for drizzling

lemon slices, to serve

1.0 tsp ground turmeric

1.0 tsp sugar

1.0 tbsp each ground cinnamon and garam masala

4 small, or 8 baby aubergines

2 tomatoes , sliced

vegetable oil , for frying

4 garlic cloves , finely chopped

small bunch coriander leaves, finely chopped (leaving some to serve)

FOR THE FILLING

225.0g lean minced lamb

1 large onion , finely chopped

2.0 tbsp each currants and pine nuts

1-2 red or green chillies , according to your taste, deseeded and finely chopped
