1 head green-leaf lettuce, leaves separated, rinsed and dried

1 medium cucumber, peeled, seeded and cut into thin matchsticks

1 package spring roll wrappers

2 carrots, peeled and grated

5 scallions, green and white parts cut into 1/2-inch lengths

2 tablespoons shredded carrot

3 tablespoons fish sauce

1 tablespoon sugar

1/3 cup peanuts, chopped

Generous handfuls fresh Thai (or regular) basil, mint and cilantro leaves

4 ounces thin rice noodles

Spring Rolls

2 cloves garlic, finely chopped

1 Thai chile pepper or jalapeƱo, finely chopped

Dipping Sauce

Juice from 1 large lime (1/4 cup)
