Ingredients for 2 servings

2 lbs large shrimp, head and tail on

4 (12oz) bottles lager beer

1 tablespoon cider vinegar

1/2 lemon

1 head of garlic, split through the equator

3 bay leaves

2 sprigs of thyme

1/2 tablespoon black mustard seeds

2 dried red chiles

1 tablespoon Old Bay seasoning

1 teaspoon sugar

Preparation

1.

Begin by making the court bouillon

2.

Add all the ingredients except the shrimp to a large pot and bring to a boil

3.

Reduce heat and simmer for 10 minutes to allow the flavors to come together

4.

Add shrimp, bring back to a boil then immediately shut off the heat and let them steam in the court bouillon

5.

Once they have turned completely pink, about 12-15 minutes, strain and serve.
