1 lb chuck or stewing beef , cut into pieces

1/4 teaspoon pepper

1/2 teaspoon salt

1 (14 1/2 ounce) can tomatoes , chopped

1 onion , thinly sliced

1 bay leaf

4 beets , trimmed, peeled and diced

1 cup cabbage , sliced

3 carrots , sliced

2 teaspoons olive oil

8 cups beef broth (I used 1 can chicken broth and 1 can beef broth)
