1/4 cup light miso paste

1/4 cup Japanese rice wine vinegar

1/4 cup light brown sugar

3 x stripes of rind off 1 orange

juice of 1/2 an orange

1 tbsp fresh ground ginger

1 1/2 cup brown rice

3 cup vegetable broth

1/2 cup fresh or frozen peas

2 x shallots, finely diced

1/4 cup finely chopped flat leaf parsley leaves

3 stalks green onion, finely sliced

6 x shiitake mushrooms, stems removed & sliced

fresh ground pepper

sea salt
