Ingredients for 6 servings

olive oil

1 1/2 lb boneless chicken breasts, preferably organic and kosher, cut into chunks

1 red onion cut into thin wedges

1 lb small red potatoes, unpeeled diced

3 garlic cloves chopped

2 tbsp flour

1 tsp thyme chopped

1 bunch asparagus, woody bottoms snapped off, cut into 1/2 inch pieces

1 cup fresh or frozen defrosted peas

1 1/2 cup Chicken Stock

2 tbsp dijon mustard

3 tbsp wine vinegar

1 tbsp honey

salt and pepper to taste

2 tbsp chopped fresh parsley and/or dill
