Ingredients for 6 servings

2 tablespoons toasted sesame oil

2 tablespoons red wine vinegar

2 tablespoons olive oil

1/2 teaspoon salt

3 tablespoons red chili paste with garlic

1 lb boneless skinless chicken breast , cut in 3/4 " cubes

KUNG PAO SAUCE

1 cup unsalted dry roasted peanuts

1/2 cup chicken stock

1/2 cup olive oil , plus

EGG WHITE-CORNSTARCH MIXTURE

1/4 cup sugar

2 egg whites

PASTA

1/4 cup minced garlic

1 lb spaghetti

2 tablespoons cornstarch

3 cups coarsely-chopped scallions , greens and whites

1/2 cup dry sherry

10-15 whole chinese dried red chili peppers (don't eat these, they are for color and heat)

3/4 cup soy sauce
