Pancakes are really tasty.Blueberries used added extra flavor to the pancakes.I also prepared these pancakes by using chocolate chips and it was really tasty.

I used all whole wheat pastry flour once and all whole spelt flour another time with excellent results. I also substituted melted unsalted butter for the canola oil.

Ingredients for 15 servings

1 cup whole wheat flour

1/2 cup Unbleached All-Purpose Flour

2 tsp baking powder

1 tsp baking soda

1 tbsp sugar

1/8 tsp salt

2 x large eggs

1 1/2 cup Buttermilk

1 tsp vanilla extract

3 tbsp canola oil

1 cup Cooked quinoa

1 1/2 cup Fresh or Frozen blueberries
