  • 1/2 (16 oz) bag baby carrots, cut into 1-inch chunks or 8 ozs parsnips , cut into 1-inch chunks
  • 1 small onion , cut into 1-inch pieces
  • 2 small sweet potatoes , peeled and cut into 1-inch chunks (about 1 lb total)
  • 4 large skinless chicken thighs (about 1 1/2 lbs with bones)
  • 1/4 cup maple syrup
