2-3 tablespoons Summer Pesto or Winter Pesto (recipes below)

Summer Herb Pesto : 3/4 cup chopped fresh basil

1/4 cup chopped fresh parsley

2 cloves garlic, peeled and chopped

1/4 cup grated Parmesan or Romano cheese

1/4 cup slivered almonds, roasted

1/4 cup extra-virgin olive oil, divided

Salt and pepper to taste

Winter Herb Pesto : 3 tablespoons chopped fresh rosemary

3/4 cup chopped fresh parsley
